I came across this interesting recipe today on YouTube. It features Fresh Portabella mushrooms that are stuffed "raw" style.
The secret to these delicious stuffed mushrooms are the pistachios used in the pesto filling. Adding a rich nutty flavour to a fresh pesto makes this meal perfect with a side salad for lunch or dinner.

Mushrooms "Go Green" In Calgary
That's right! Mushrooms Canada is in Calgary this weekend cooking up a storm at the Calgary Go Green Expo at the Roundup Centre at Stampede Park, March 27-28th.
I will be preparing two of my favourite recipes at the Go Green Kitchen; Sweet and Spicy Stir-Fried Mushrooms, and Grilled Mushroom, Tomato and Avocado Feta Salad.
Make sure you swing on by and sit in the audience, everyone who does will recieve a sample of the recipes, a brown paper bag, recipe booklet, and a ballot to enter to win a T-Fal Hot Spot Frying Pan.

Guess Who Loves Mushrooms!
I heard through the grapevine that none other than Ms. Katy Perry has a fascination with fresh mushrooms!Katy says, "I love mushrooms. I could eat a ton of them. I really love truffles but I hardly ever get them. Mushrooms in general though are so healthy and good for you. I can't get enough."
She also says they are her favourite food, and are great for staying slim.
Well, since Katy will soon be marrying vegetarian Russell Brand, I have picked out a few vegetarian mushroom recipes that I think both of them would enjoy!
- Vegetarian Mushroom Burger with Mango, Papaya & Avocado Relish, Mushroom Aioli, and Fries
- Mushroom, Tomato and Basil Ragout
- Balsamic and Chili Glazed Mushrooms with Walnuts

A Great Time at the Toronto Wine & Cheese Show
Well, we are back from another successful weekend at the Toronto Wine & Cheese Show!
Mushrooms Canada would like to thank everyone who stopped by our booth and enjoyed a sample of Sauteed Fresh Canadian Mushrooms.
If walked around and fully enjoyed the show then you would have quickly realized that not only did Mushrooms Canada have a booth, but we were also cooking up a storm on The Bay Sip & Savour Stage.
Chef Nathan Zak and I cooked up two delicious mushroom recipes for a full crowd; a Baked Mushroom Topped Brie (as pictured below), and a Grilled Mushroom, Tomato and Avocado Feta Salad.
As if this Baked Brie recipes was not a big enough draw, people came from far and wide to see Saturday's Guest Host, David Adjey.
In just 30 minutes Mr. Adjey whipped up a delicious Duck Sandwich on Toasted Garlic Bread, with a Sauteed Green Bean Almondean, and a lovely Brussels Sprout Hash. It looked amazing!
So once again we thank everyone who stopped by, and we hope to see you at the Toronto Wine & Cheese Show next year!
