I’m trying my best to keep cool by eating light, summery dinners. Last night’s dinner was an excellent mixed greens salad with grilled chicken and red peppers and fresh, sliced Crimini Mushrooms to top with a side of homemade guacamole and whole wheat pitas. It was an ideal dinner dish that kept us cool and full!
