The former “mom-jobs” are now theirs to embrace and hopefully conquer. The cleaning, the laundry and of course the cooking isn’t always second nature and may not be the easiest for all students to tackle, but we have some solutions. No one wants to live on KD forever.
1lb. (500g) ground beef, ground turkey, or ground chicken
2 cups (500mL) sliced mushrooms
1 medium onion, chopped
1 medium green pepper, chopped
1 can (28oz/796mL) diced tomatoes
1 cup (250mL) water
1 ½ cups (375mL) spaghetti pasta noodles (broken into pieces)
1 tsp. oregano
1 tsp. salt
Optional: Your choice of cheese
In a large skillet, combine the ground meat, mushrooms, onions and green pepper. Cook over medium-high heat until the meat is browned and the veggies are soft (approx. 10 minutes).
Add tomatoes, water, spaghetti noodle pieces, , oregano and salt. Bring to a boil, and then reduce the heat to medium-low.
Cover and cook for 15-20 minutes or until the pasta is tender, stir occasionally. Remove from heat, add optional cheese and serve.

Encourage your scholar to share recipes and cooking duties with roommates! This will help cut costs and will introduce new recipes and ethnic dishes. Happy eating and good luck to all the new students!
