With a little extra time on my hands to watch my oven and listen for timers, I wasn't afraid of looking at recipes with a longer cooking time. Although this Mushroom and Spinach Cannelloni with Emmental Cheese Sauce takes 2 hours total, it is the perfect vegetarian dinner dish for tonight! It's warm, comforting and allows for some great work-week leftovers.
