This past weekend, I pulled everything I could out of the fridge and threw it all on the barbecue. Chicken breasts, peameal bacon on a bun, roasted peppers and mushroom caps stuffed with goat cheese and pesto and some bacon wrapped Enoki mushrooms.
These tightly wrapped appetizers were certainly a hit! Next time I may consider marinating them, but for my first go at them, I just bunched the mushrooms, wrapped the bunch in one thick strip of bacon and secured with a toothpick. Simple and delicious.
