Roasted Seasonal Balsamic Veggies with Goat Cheese

I'm so lucky to have the opportunity to read through so many wonderfully mouthwatering food blogs daily. Each tab is full of creative, inspirational dishes that inspire readers to bring out the best in their own kitchens.

I'll admit, I'm not a great cook, but each day I find vast amounts of bloggers who make me want to be one. I'm motivated by all of you talented foodies out there who make it all seem so simple and fun. Today's post was inspired by this fantastic recipe for Roasted Balsamic Zucchini and Mushrooms with Feta and Thyme from Kalyn's Kitchen. It's super easy and delicious with loads of fresh veggies.


My dish is slightly altered from her original version, adding red peppers and onions and replacing feta with goat cheese. Otherwise, follow the same method and you'll have a wonderful pairing to any dish.


Or a tasty light lunch! In this version, I used yellow peppers.
