I love using mushrooms for my noodle soup I make. Not only I put the mushrooms into the veggies stock I prepare, I always top off the soup noodles with strips of various types of mushrooms. It is a great replacement for days I am not into meat.

Scalloped potatoes gratin with in between each layers some boletus mushrooms and creme fraiche !! It melts in your mouth... With a nice full body French red wine, this is perfect to get curled up in a ball on the floor because you ate too much :)

my fave mushroom recipe is very very simple. Melt tablespoon of butter in a saucepan, throw in some chopped garlic, green onions, cayenne pepper, toss mushrooms (any kind!) in and stir til mushrooms are tender and turn off heat. Squeeze a slice of lemon on top. Eat!
